A top class, unfiltered, full flavoured single estate oil from Puglia.
The oil has a rich golden colour, a delightful aroma of fresh olive with lemon and an exceptionally big flavour with a pronounced bold, strong and peppery finish.
The oil is made from freshly picked, Coratina and Peranzana olives HARVESTED IN NOVEMBER/DECEMBER 2012.
The olives are pressed in the Frantoio (mill) through rather attractive and rustic pink granite millstones, cut from the famous quarry at Carso Goriziano and the oil then extracted from the paste at temperatures as low as possible to maximise its quality.
The estate, La Spinetta can be found about an hours drive north west of Bari, in the upper reaches of Puglia in the “boot” of the south east of Italy. The olives are grown organically, as is the farms only other crop, almonds.
The Pellegrino family have run the estate for many years. It is now managed by Sebastiano and his son Elia with the olive oil production itself supervised by long serving employee (and national olive oil tasting expert!) Nikos.
The estate has 23,000 olive trees each of which is individually pruned every year after the harvest, into the distinctive “Y” shape traditionally favoured throughout Puglia, to allow the hot southern sun into the very heart of the tree during the next season and so to encourage growth.
The Frantoio has its very own security guard (the sheriff!) complete with old Wild West moustache(honestly!) and guns (seriously) to make sure the oil stays where it belongs in the mill and not spirited away at night by the local Mafioso!
