A very well priced older vinegar from an equally well respected family producer in Modena, northern Italy.
Not quite the quality of a Tradizionale, but at a fraction of the cost!
Lovingly nurtured for at least 12 years in traditional wooden barrels, it has good depth, an incredibly intense flavour and excellent balance between the sweet and the sour.
Superb when lightly drizzled over salad leaves, grilled fish & steak, rare roast beef, shavings of parmesan, blue cheese, salami, mushrooms, tomatoes, asparagus, smoked salmon, king prawns, strawberries, melon or pear & premium quality vanilla ice cream.
The balsamic for finer drizzling and more special occassions and dishes.

I bought a mature balsamic vinegar from the supermarket as I had run out of this, but it is substantially inferior. Once tasted never substituted!
