Pappardelle
A classic Tuscan pasta, a ribbon a little wider than fettucine or tagliatelle.
The name derives from the Italian verb "pappare", to gobble up!
The ribbons are very absorbent and sturdy, making it ideal for thick, chunky, meaty, rustic sauces. Delicious with mushrooms or truffles, as well as with fish and vegetables. Also superb when broken into pieces and added to clear soups.
