Paccheri di Gragnana
A large, hollow, tube shaped pasta, similar to Rigatoni but shorter and with a larger diameter.
Legend has it that the shape was invented by farmers as a way of smuggling garlic cloves (hidden inside), over the border from Italy and into Prussia when the Prussian government banned trade in Italian garlic!
Paccheri can be stuffed and then baked with meat, seafood or vegetables together with various sauces.
Lovely too when tossed with thick chunky sauces that work their way into the pasta pieces to give the most delicious bursts of flavour as one chews through them.
