Tomato and Salami
Serves 4
Ingredients:
- 6 medium vine ripened tomatoes, sliced thickly
- 125g sliced salami
- 1 clove of garlic, crushed
- 4 tablespoons extra virgin olive oil
- 1 tablespoon fresh lemon juice
- ˝ teaspoon grated lemon zest
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped fresh basil
- Sea salt and freshly ground black pepper
Arrange overlapping slices of tomato and salami in a shallow dish.
Combine the oil, garlic, lemon juice, lemon zest, parsley, basil, salt and pepper in an old, clean olive or jam jar, screw shut and shake.
Pour over the tomato and salami and allow to stand for 1 hour in the fridge before serving.
