Cod and potatoes with a twist...

Looking for a dish that's big on flavour as well as texture? With a crunchy topping to succulent white fish and crisp potato to go with it, this recipe is a dinner party must-make.





Heat oven to 220°C

Cut slits every 0.5cm on each potato

Microwave for 10-12 minutes until starting to soften

Grate the bread into breadcrumbs and combine with the orange and mandarin infused olive oil, dill, garlic and seasoning.

Season the cod, put it on a baking tray and top with the crumb.

Put the potato on the same tray, drizzle with extra virgin oil and sprinkle with salt and pepper. Bake for 12-15 minutes until the fish is cooked and the potato is tender but crispy.

Serve with crème fraîche, steamed vegetables, and a drizzle of chilli infused balsamic.
