Making aged balsamic vinegar of the highest quality is his true passion, and he is immensely proud of his products and his estate.

His Acetaia is an Aladdin’s cave of ancient, lovingly cared for barrels of oak, juniper, ash, mulberry and cherry, some of which contain balsamic vinegar up to 200 years old. The barrels alone are worth a fortune but when the value of the balsamic is factored in too, his Acetaia is worth millions.

Mr Tagliavini makes our superb Vintage balsamic vinegar in these barrels. Like the Classic and the Reserve ranges it is made from Trebbiano and Lambrusco grapes grown on his land, crushed and then matured in his beautiful wooden barrels for at least twelve years. When the vinegar is eventually bottled it has the most remarkable flavour which words simply cannot describe or do justice to.
