Garlic chilli and olive oil pasta

Garlic chilli and olive oil pasta is bound to set your taste buds into a frenzy, pared with basil or lemon infused olive oil its set to be a favourite all round.

Ingredients

  • Dried or fresh pasta
  • spaghetti or tagliatelle: 500g
  • Garlic: 4 cloves
  • crushed Red chilli: 2, seeded and finely chopped
  • Sicilian, Basil or Lemon Infused Olive Oil: 6 tablespoons
  • Fresh flat leaf parsley or fresh basil: large handful, finely chopped Sea salt & freshly ground
  • pepper: a pinch

Method

  • Cook spaghetti in a pan of boiling salted water for the time stated on the packet. It is best to cook pasta 'al dente' so that it still has a little bite.
  • Whilst the pasta is cooking heat 2 tablespoons of the olive oil in a small frying pan over a low heat. Add the garlic and chilli and cook until softened.
  • Add the parsley or the basil, a little salt and plenty of freshly ground black pepper.
  • Cook for a further 30 seconds, and then add the spaghetti to the pan.
  • Add the remaining olive oil, and once the spaghetti is fully coated, you can serve!
  • SERVE
  • With salad, garlic bread or on its own.
