Halloumi black olive tomato tart

A healthy and easy meal, it has has everything that a good recipe should have, which is contrast in texture and consistency, it combines rich olives with the sweetness of cooked tomatoes, and cheesiness of halloumi.

 

 

Ingredients

  • Ready to roll puff pastry
  • Sliced halloumi
  • Handful black olives
  • Tomato passata
  • Tomato puree
  • Alentejan, Sicilian, or one of our Infused Olive Oils
  • Pomegranate & Fig Balsamic

Method

  • Preheat oven to 220C/fan 200C/gas mark 7.
  • Unroll pastry.
  • If making individual tarts, cut into four/six.
  • Score a border 1cm in from the edge with a knife. Mix the passata with some puree to make it thicker, and spread the mix within the border. Halve the olives and remove the stone, and then add the slices of halloumi.
  • Drizzle with Premium Estate Olive Oil and bake in the oven for 15-20 minutes.
  • SERVE
  • Dress with Pomegranate & Fig Balsamic and a Premium Estate or Infused Olive Oil and serve as a starter or as a main with salad or couscous.
