Ham and spring onion omelette

An omelette is a classic dish that is quick, satisfying and a great way to use up any leftovers you have in the fridge.



Mix the eggs with the milk.

Heat the Sicilian olive oil in a medium non-stick frying pan, 1/4 of the egg mix to the pan.

Add 1/4 of the chopped spring onion.

Sprinkle on a handful of ham and optional cheese.

Continue cooking until just set in the centre, flip where necessary.

Serve straight from the pan, drizzle chilli and garlic infused olive oil and orange and ginger infused balsamic over the finished omelette once served.

Repeat 3 times until all 4 omelettes are cooked.

Serve with a crunchy salad, drizzled with 3 tbsp of chilli pepper infused olive oil and 1 tbsp of caramelised onion balsamic to create a meal full of flavours.
