Jewelled Christmas Sprouts (Vegan)

This is a really different and delicious way to serve your sprouts this Christmas. Rather than your traditional bacon or chestnuts, try serving them with almonds and pomegranate seeds- the pomegranate seeds will sparkle in the centre of your table and the buttery Alentejan Olive Oil will make them gleam!

Method

  • Pre heat the oven to 180C.
  • Slice the sprouts in half, and chop the potatoes to be around the same size as the sprouts so that they cook in the same amount of time.
  • Put them in a baking tray, add a little olive oil and salt and pepper and toss to coat. Cook for around 35-40 minutes until golden brown.
  • Mix with the pomegranate seeds and the almonds and then serve with lashings of our Alentejan Extra Virgin Olive Oil.
  • SERVE
  • With your Christmas dinner, to use up any leftover sprouts, or enjoy cold as a salad with roast meats or cheese.
