Lime and chilli garlic scallops

Often dismissed as being too difficult to cook, this recipe for scallops is simple and easy to make and is sure to impress your barbecue guests!

Method

  • Fry the scallops in the Lime with Chilli or Chilli & Garlic Olive Oil for about 1 minute until golden, then flip them over and cook on the other side for 1 minute more.
  • Squeeze over the juice of the lime. Finish off with a drizzle of Garlic & Ginger Balsamic, the roughly chopped coriander and salt and pepper
  • SERVE
  • On a bed of rocket salad as a starter, or with stir fried vegetables, noodles, rice, quinoa or another grain as a main course.
