When we first tried this at The Gift of Oil, the staff collectively groaned with pleasure and proceeded to finish off the whole batch we had made. I cannot stress enough how delicious it is, and so so easy- just three ingredients! It can be whipped up as a last minute starter, or you can give some to a friend as a gift. I'm planning on making a big batch for Christmas and giving it as gifts and we are having it as a starter on Christmas Day!

It is best served alongside our homemade Port Chutney (which is equally easy to whip up and balances out the richness of the Stilton) with other cheeses as part of a cheese board, on toast as a starter, in wraps, on sandwiches, in jacket potatoes, or on crackers. You could also stuff mushrooms with this mixture, or bake it in a tart. Please let us know what you think and if you create any wonderful concoctions!

Ingredients

  • 225g Stilton cheese
  • 50g unsalted butter
  • 100g walnuts

Method

  • Leave the butter out to soften for as long as possible. In a bowl combine the Stilton cheese with the butter and ‘cream’ the two together.
  • Roughly chop the walnuts by hand and then add to the butter & Stilton mixture.
  • SERVE
  • With our delicious Port Chutney. You can also enjoy on panini’s, wraps, sandwiches, and on a ploughman's or cheese board.
