Vegetable halloumi kebabs (v)

Vegetable kebabs are a must have during BBQ season, they a quick and easy to prepare and don't require a lot of ingredience.

Vegetable kebabs are a must have during BBQ season,  they a quick and easy to prepare and don't require a lot of ingredience.

However, once grilled, they can often be left tasteless and dry. A season of Cranberry & Orange Balsamic can bring them back to live and make them flavoursome and utterly delicious.

Ingredients

  • 120 g sliced halloumi cheese
  • 1 sliced yellow pepper
  • 1 sliced courgette
  • 140 g cherry tomatoes
  • 1 chunkily chopped red onion
  • Handful chopped fresh mint leaves
  • ½ chopped fresh red chilli
  • 1 lemon zest
  • A Premium Estate or Mint Infused Olive Oil
  • Cranberry & Orange Balsamic

Method

  • Soak 6 wooden skewers in cold water to stop them from burning. Preheat the grill to high or start the BBQ.
  • Add the chunks of halloumi, pepper, courgette, onion, mint, chilli and lemon zest to a large mixing bowl.
  • Glug over the Premium Estate or Mint Olive Oil, add pepper to taste and mix well.
  • Lightly grease a baking tray with oil if using a grill and then put aside.
  • Divide the halloumi cubes, cherry tomatoes, pepper, red onion and courgette pieces between the skewers.
  • Place onto the greased tray or BBQ and cook until the cheese is golden and the veg are soft, turning half way through. Just before removing from the heat, drizzle with Cranberry & Orange Balsamic.
  • SERVE
  • Serve with a fresh green salad and some flatbreads or pittas.
