Ingredients
- Romaine lettuce
- Iceberg lettuce
- 1 large red onion
- 3 large spring onions
- 1 red pepper
- 2 celery sticks
- ½ cucumber
- A handful of radishes
For the dressing:
- 3 tbsp Sicilian olive oil
- 2 tbsp red wine vinegar
- 1 heaped tsp Dijon mustard
Recipe
Roughly shred the lettuces. Peel and slice the red onion, and chop
the pepper, spring onions, celery, cucumber and radishes. Place all
the chopped ingredients into a large salad bowl.
For the dressing, combine the Sicilian olive oil, red wine vinegar, and
Dijon mustard in a salad shaker or an empty jam jar. Shake
vigorously until well combined.
Pour the dressing over the salad and toss thoroughly, ensuring the
salad is well coated before serving.
