
Ingredients
- 20 digestive biscuits
- 270g British strawberries, chopped
- 1 lemons, zested, and juiced
- 7 tbsp golden caster sugar
- 2 tsp vanilla extract
- 600g soft cheese
- Drizzle with chocolate and coffee balsamic
Method
Using a whisk, mix soft cheese, vanilla extract and sugar in a large mixing bowl with lemon zest and juice. Put the digestives into a bag and bash gently with a rolling pin until crushed. Half the crushed biscuits, strawberries and cream mixture.
Using half of the ingredients, divide the biscuits into the bases of 4 serving glasses, layer with the strawberries, then top with the creamy cheesecake mixture. Repeat with the remaining ingredients, dress with a strawberry, drizzle with chocolate and coffee balsamic just before serving.
