Ingredients
- 1 x 250g pack of halloumi cheese
- 2 tbsp flour
- 2 tbsp lemon olive oil
- Freshly ground pepper to season the flour
- Kalamata olives and sprigs of coriander to garnish
For the dressing
- Juice of 1 lemon and zest
- 1 clove of garlic, crushed
- 1 heaped dsp capers packed in salt, thoroughly rinsed.
- 1 heaped tsp grain mustard
- 1 tbsp fresh coriander leaves, finely chopped
- 3 tbsp lemon olive oil
- 1 tbsp mango and passionfruit balsamic
- Freshly ground black pepper
Method
Make the dressing by stirring together all of the ingredients in a small bowl.
Drain and pat dry the halloumi with kitchen paper and cut into 8 slices.
In a large frying pan, heat the lemon olive oil over a medium heat until very hot.
Take each slice of cheese, pressing both sides into the seasoned flour until coated and then add to the frying pan. Cook for 1 minute on each side until golden brown.
Serve 2 slices to a plate, pour over the dressing, and garnish with the Kalamata olives and coriander sprigs. Serve immediately.
