Ingredients
- 2 oranges
- 1/2 cucumber
- 4 radishes
- 4 fresh mint leaves
- Juice of 1/2 a lemon
- Salt and freshly ground black pepper
- 3 tbsp garden mint olive oil
- 1 tbsp white balsamic
Method
Peel the oranges, carefully removing any pips or shreds of white pith. Cut into thin slices and place in a serving bowl.
Wash the cucumber and radishes, cut into thin slices and add to the oranges.
Rinse the mint leaves, tear up and sprinkle over the serving bowl.
Add the garden mint olive oil, white balsamic, lemon juice, a little salt and freshly ground pepper.
Toss thoroughly and serve immediately.
