Our Alziari Cuvée Prestige extra virgin olive oil is a mild, delicate Niçoise-style oil from Provence, in the south of France. Made from the small, maroon Cailletier olive native to the region — together with a closely guarded selection of other varieties — it has a rich, buttery texture, with gentle flavours of ripe avocado and banana and lovely creamy almond notes on the finish. Its subtlety makes it ideal for finishing delicately flavoured dishes, or for making vinaigrettes and mayonnaise. Being pure extra virgin olive oil, it's suitable for vegetarians and vegans, and gluten free.
Nicolas Alziari has produced olive oil in Nice since 1868 and champions the traditional "Genoese" method of cold extraction: freshly picked olives are slowly ground for several hours in an ancient stone basin to release their oils, the basin is then topped up with cold water, and the fresh oil is left to float to the surface before being collected and decanted into the tins.
The Cailletier olives are grown in Provence and harvested between late autumn and the start of winter. The other varieties in the blend remain a closely kept secret — and have been for over seventy years.
