
Ingredients
- Cherry tomatoes on the vine
- 2 beef tomatoes
- 2 buffalo mozzarella balls
- Basil leaves
- Homemade or shop bought, green pesto mixed with extra Basil Infused Olive Oil for additional flavour.
- 3 parts Basil Infused Olive Oil (for dressing)
- 1 part Caramelised Onion Balsamic or Vine Tomato Balsamic (for dressing)
- Sea salt and cracker black pepper
Method
Slice the tomatoes and mozzarella balls and basil leaves on to them, alternating between the three ingredients.
Place a teaspoon of pesto on each slice of mozzarella
Drizzle with Basil infused Olive Oil and season with sea salt and cracked black pepper.
Drizzle with Caramelised Onion Balsamic or Vine Tomato Balsamic
Serve
As a main dish or as a side with bbq meats, fish, mushrooms, salads, corn, potatoes or other bbq foods.
