Ingredients
- 1 loaf crusty baguette
- 8 chopped & drained fresh tomatoes
- Half a finely chopped red onion
- 3 cloves of crushed garlic
- 8 leaves of chopped fresh basil
- Half tbsp vine tomato balsamic
- Salt and pepper to taste
- 2 tbsp Basil Olive Oil
- Sea salt + black pepper
Method
Mix the onions, tomatoes, garlic and basil in a bowl taking care not to
break up the tomatoes too much.
Add the vine tomato balsamic and Basil Olive Oil and salt and pepper
to taste. Mix the contents again.
Cover and refrigerate for at least an hour.
Slice the baguette loaf into thick slices and lightly toast until they are
light brown on both sides.
Serve the mixture on the warm slices of bread.
Serve
As a starter, a snack, to accompany pasta, or as a quick main meal.
