Ingredients
- 3 small red apples, cored and sliced
- 100g mixed leaves
- 200g feta, broken into chunks
- Zest and juice of 1 lemon
- 3 tbsp lime olive oil
- Salt and freshly ground black pepper
- 1 tbsp green apple balsamic
- 2 heaped tbsp clear honey (optional)
Method
Toss apple slices with mixed leaves and arrange on a platter. Dot
with feta and scatter over lemon zest. Whisk lemon juice, lime olive
oil, green apple balsamic, salt, and pepper. Drizzle over the salad.
