Ingredients
- 1kg baby new potatoes 4 tbsp chilli & garlic oil
- 4 whole cloves of peeled garlic (if desired)
- 1 handful chopped chillies (if desired)
- Sea salt
- Cracked black pepper
Method
Preheat the oven to 220ºC (200ºC fan). Put the potatoes in a
roasting tray along with smashed garlic, chillies and a good
grind of sea salt and cracked black pepper and cook in the oven
for 45 minutes to 1 hour or, until they are crispy on the outside
and soft on the inside. Alternatively, you can wrap them in
tin-foil and cook them on the BBQ for the same amount of time,
turning and shaking occasionally.
When cooked and crispy cut the potatoes into halves and glug
over plenty of the chilli & garlic oil and top with the parmesan
cheese. Add sea salt and cracked black pepper to taste. or serve as a side dish at your BBQ’s
