Ingredients
- 250g dried Orzo or other small pasta shapes
- 1tbsp White Balsamic
- 70g Sundried tomatoes, roughly chopped
- 1 tbsp capers
- 2 shallots, finely chopped
- 70g pitted Kalamata olives, roughly chopped
- 145g can of crab meat
- 50g wild rocket leaves
- 3 tbsp Lime & Chilli Olive Oil
- Sea salt & black pepper
Method
Cook pasta according to the pack
In a large bowl, mix together the balsamic and olive oil.
Drain the pasta when cooked and refresh under cold water.
Transfer pasta to bowl with the dressing. Add shallots, olives, capers, tomatoes, crab and rocket.
Season with sea salt & black pepper to taste.
Gently toss until everything is coated.
Serve with an extra drizzle of lime & chill olive oil & white balsamic to suit and enjoy!
