
Balsamic Glazed Carrots

Serves 4

Ingredients
1 1/2 lbs of carrots, peeled
2 tbsp Classic Balsamic
3 tbsp Basil Olive Oil
1 tbsp maple syrup
1/2 tsp crushed red chilli flakes
2 tbsp chopped flat leaf parsley
Sea salt & black pepper
Method
Preheat oven to 200C/fan 180C/gas 6.
Slice carrots into sticks. Approx 3 inches long and 1/2 inch thick.
Place carrots into a bowl with the Classic Balsamic, basil olive oil, maple syrup, chilli and salt.
Toss until evenly coated and spread onto a baking tray.
Roast for 30-35 minutes, stirring halfway through untilĀ the carrots are tender and caramelised.
Transfer to a serving dish, sprinkle with chopped parsley and a little freshly ground black pepper to taste!
