How Is Alziari Extra Virgin Olive Oil Made?

The Nicolas Alziari Cuvee Prestige is a mild and delicate olive oil made from the native to Provence small, maroon coloured Cailletier olive together with a closely guarded secret selection of other olive varieties. Harvest is between late autumn and the beginning of winter.
This  Nicoise style olive oil is mild and delicate and ideal for finishing subtly flavoured dishes or making vinaigrettes or mayonnaise.
The company has produced olive oil in Nice since 1868 and champion the "Genoese" method of cold extraction. Freshly picked olives are slowly ground for a few hours in an ancient stone basin to release their oils. The basin is then topped up with  cold water and left until the fresh oil floats to the top before being collected and decanted into the tins.

Where are Alziari Olives Grown?

The Cailletier olives are grown in Provence, southern France whilst the other varieties used in the blend are a secret and indeed have been now for over 70 years!

 

What flavours should I expect?

The oil has a rich, buttery texture, with gentle flavours of ripe avocado and banana and some lovely creamy almond notes on the finish.
