This classic balsamic is made from the Trebbiano and Lambrusco grapes grown on the family estate of Nicolo Verrini in the countryside near to Modena in northern Italy.
Nicolo himself selects and oversees the crushing and cooking down of his grapes into a top quality must, which he then combines with a small amount of a premium, high acidity wine vinegar to start the fermentation process. This is then matured in oak barrels, which allows the water in the must to evaporate naturally with the Italian heat, the flavours in the oak barrels are absorbed and the taste becomes deep, beautifully sweet and well balanced.
