Italian Cheese Log
Ready In 20 mins
500g cream cheese , softened
1 tsp Italian Seasoning
1 tsp garlic powder
1 tsp chilli flakes (adjust to taste)
100g cheddar or gruyere cheese, finely and freshly grated
280g roasted peppers, drained and finely chopped
3 gherkins, finely chopped (optional)
150g pitted olives , finely chopped
3 spring onions, finely sliced
40g parmesan cheese, finely grated
Sea salt & black pepper, to taste
1 tbsp Rosemary & Garlic Olive Oil and extra for drizzling
220g sun dried tomato strips, roughly chopped
Handful flat leaf parsley , finely chopped (or chives)
Rosemary sprigs (decoration)
Chilli Balsamic (hot), for drizzling
Crackers or crusty bread, for serving
Carefully line a loaf tin with cling film leaving some
overhang to fold over later.
Mix prepared Cheese Log ingredients together. Taste and adjust salt if needed
(bear in mind saltiness of crackers you are serving with)
Scrape into loaf tin and level surface, pressing to remove air pockets.
Cover with cling film overhang and refrigerate for 4 hours+ (up to 1 week).
Turn out onto platter, peel off cling wrap.
Top with chopped sun dried tomatoes and an extra drizzle
of Rosemary & Garlic Olive Oil.
Garnish with parsley, chives and rosemary sprigs to give it a festive look.
Serve with crackers or crusty bread and a generous drizzle of
traditional Reserve Balsamic or our Chilli Balsamic (hot)!
Best to serve closer to room temp than fridge cold.
