
Smoked Duck ,Cherry & Basil Salad
Easy Smoked Duck Salad

Serves 2

Ingredients
- 1 bag of washed mixed salad leaves or baby spinach
- 2 smoked duck breasts, thinly sliced
- 1 large handful of cherries, pitted and roughly chopped
- 1 small pear, peeled, cored and thinly sliced
- a handful of basil leaves, torn or cut into strips
- sea salt and black pepper to taste
- 3 tsp basil infused olive oil
- 1 tsp black cherry balsamic vinegar
- crusty bread for serving
Method
Place the salad and basil leaves into a large bowl along with the cherry’s and pear
Pour over the basil oil and the black cherry balsamic then mix well
Divide the salad on to two plates and top with the duck
Season to taste and serve with the crusty bread
