Herby Quinoa and feta salad

Prepare the quinoa by following the instructions on the packet or buy a ready
made pouch from the supermarket. Dry fry pine nuts in a pan over a medium
heat, stirring frequently until golden in places, it should take around 3 minutes.
Break open pomegranate and remove seeds or open ready prepared tub!
Roughly chop coriander, flat leaf parsley and mint. Combine all the ingredients
in a large serving bowl, add lemon juice and gently mix. Finally top with
crumbled Feta cheese and lashings of Lime & Chilli Infused Olive Oil and Mango & Passionfruit Infused Balsamic
As a side to meat or seafood, stir fry or noodles.
