Lime and chilli garlic scallops

Serves 3
Ingredients
- 6-8 scallops
- 1-2 tablespoons
- Lime & Chilli Infused Olive Oil or Chilli & Garlic Infused Olive Oil
- Juice of half a lime
- Chopped coriander Drizzle of Garlic & Ginger Infused Balsamic
- Salt and pepper
Method
- Fry the scallops in the Lime & Chilli Infused Olive Oil or Chilli & Garlic Infused Olive Oil for about 1 minute until golden, then flip them over and cook on the other side for 1 minute more.
- Squeeze over the juice of the lime. Finish off with a drizzle of Garlic & Ginger Infused Balsamic, the roughly chopped coriander and salt and pepper
- SERVE
- On a bed of rocket salad as a starter, or with stir fried vegetables, noodles, rice, quinoa or another grain as a main course.
