Olive and tomato dressing

- Vine ripened tomatoes: 175g, skinned and finely chopped
- Pitted black olives: 50g finely chopped
- Sicilian , Alentejan, Garlic or Lemon Infused Olive Oil 5 tablespoons
- Fresh lemon juice: half a tablespoon (unless you use the lemon oil)
- White Wine Vinegar: half a tablespoon Grain mustard: 1 teaspoon
- Garlic: 1 clove, crushed (unless you use the garlic oil)
- Fresh flat leaf parsley: 1 tablespoon, finely chopped
- Sea salt & freshly ground pepper: a pinch
