Pavlova Pots with Balsamic Berries

Remove the tops from the strawberries and chop. Half the berries and grapes and combine all the fruit together in a bowl.
Drizzle the balsamic over the fruit and gently stir. If possible put in the fridge or somewhere cool for a few hours before serving to allow fruit to marinate in the balsamic.
Roughly crush the meringues and divide half into serving glasses.
Whisk the cream until soft peaks form, add in the mascarpone and Lemon Olive Oil and continue to whisk to stiff peaks.
Just before serving top the meringue with the half of the cream mixture and spoon balsamic berries on top.
Repeat the process again starting with meringue, cream and finishing with extra balsamic berries.
Drizzle with a little Lemon Olive Oil and serve immediately!
