Silky Vegan Chocolate Mousse

Ingredients

  • 1 tin of full fat coconut milk, approx 400ml (leave to refrigerate overnight)
  • 3 tbsp cocoa powder
  • 3 tbsp icing sugar
  • 2 – 3 tbsp smooth peanut butter, optional but it will thicken it slightly
  • 1 tsp vanilla extract
  • Black Cherry or Chocolate & Coffee Balsamic, to serve!

 

Method

  • Refrigerate the coconut milk, preferably overnight to thicken
  • Once cold, open the tin and transfer only the thick part to a bowl, discard the watery part if any.  (Try not to shake the can, because you want the cream separate from the water underneath)
  • Using an electric mixer whip the coconut milk until smooth and a little thicker.
  • Add the remaining ingredients and whip until it forms a mousse-like texture.
  • Spoon into dishes, cover with cling film and chill in fridge before serving.
  • Drizzle with  Black Cherry  or Chocolate & Coffee Balsamic to serve!
