Courgetti feta raspberry salad (V)

Ingredients
- 4 Courgettes
- 120g of Rocket
- 200g Raspberries
- 200g Feta cheese
- 4 tbsp Pumpkin seeds
- 2 tbsp Sunflower seeds
- 3 tbsp Mint Infused Olive Oil
- 1 tbsp Classic Balsamic
Method
- Spiralize or use a potato peeler on the courgettes to turn them into long ribbons.
- Mix with the rocket, raspberries, feta and the seeds.
- SERVE
- Drizzle with Mint Infused Olive Oil and Classic Balsamic and serve alone or with pitta breads, wraps, grains or as a side dish to meat or fish.
