Tabbouleh with mint infused olive oil

This fresh, herbaceous, vegan salad from the Middle East is filling as a lunch or light dinner

Also a great side dish with pitta breads, hummus, meats or fish. We used the traditional bulgur wheat but you could use quinoa, couscous or another grain instead.



  • Cook the bulgur wheat according to the instructions on the packet. Allow to cool.
  • Finely chop all of the other ingredients and add them to a serving bowl.
  • Mix in the cooled bulgur wheat, and then drizzle over plenty of the Mint Infused Olive Oil. 
  • As a delicious lunch or light dinner, or enjoy alongside pittas, hummus, falafels, meat or fish.
