Thai style slaw

Inspired by the fresh, finely shredded salads you enjoy in Thailand

We've created this incredibly easy version which gives the same fresh flavours without needed to chop garlic, chillies, ginger or even squeeze a lime. Our Lime & Chilli Olive Oil goes fabulously with our brand new Garlic & Ginger balsamic (it will be on sale soon!), making the veg and herbs in this slaw sing.

Method

  • Finely slice (if you have one, use a mandolin or spiralizer to make this quick and easily) cucumber, carrots, white cabbage and spring onions.
  • In a separate jar add sesame seeds, fresh coriander and crushed peanuts with 2 parts Lime & Chilli Oil to 1 part Garlic & Ginger Balsamic.
  • Pour over the veg and coat well.
  • SERVE
  • As a side to meat or seafood, stir fry or noodles.
