We love sprouts salad

Everybody's Christmas favourite, with a quirky twist...

Surprise all the sprout haters as a main or side dish or try for your boxing day buffet!


  • Raw left over sprouts (ideally the small, young ones)
  • 1 or 2 Cox’s apples
  • Block of strong cheddar cheese
  • Handful of walnuts
  • Sea salt and black pepper
  • 1 part Alentejan Olive Oil to 1 part Red Wine Vinegar


  • Slice the apples and cover with lemon juice to stop them from going brown. Slice the raw sprouts thinly and put into your serving bowl.
  • Dice up the cheddar into chunks and chop the walnuts and add both to the bowl.
  • Once the apple is soaked in lemon add that to the bowl too.
  • Season with sea salt and black pepper, and then dress with a good drizzle of the Alentejan Olive Oil and Red Wine Vinegar.
