PRAWN COCKTAIL

Ingredients
- 250g lighter mayonnaise,
- 2 tbsp tomato ketchup,
- 660g Coldwater prawns,
- 1 cos lettuce, leaved separated, washed and shredded,
- ½ tsp cayenne pepper,
- 3 parts Orange & Mandarin Infused Olive Oil
- 1 part Pomegranate & Fig Infused Balsamic
Method
- In a small bowl, mix together the mayonnaise, ketchup,Orange & Mandarin Infused Olive Oil and Pomegranate & Fig Infused Balsamic
- Season to taste. Stir in the prawns, reserving 4 to garnish.
- Divide the shredded lettuce between glass dishes. Top with the prawn cocktail
mixture and garnish each with prawns and Cayenne pepper.
