Quick & Simple Tomato Chutney

Quick & Simple Tomato Chutney featured image

Ingredients

  • 500g red onion, finely sliced
  • 1kg tomato, chopped
  • 150ml Red Wine Vinegar
  • 175g brown sugar
  • 4 garlic cloves, crushed
  • 1 red chilli, finely chopped
  • 4cm piece ginger, peeled & chopped
  • 5 cardamom seeds
  • 1 tbsp Chilli Infused Balsamic

Method

  • Tip all the ingredients into a large heavy-based pan and bring to a simmer, stirring frequently.
  • Simmer for 1 hour, then bring to a gentle boil so that the mixture turns dark, jammy and shiny.
  • Add the Chilli Infused Balsamic.  Place into sterilised jars and allow to cool before covering.  Will keep for 6 weeks.
