
Quick & Simple Tomato Chutney

Serves 10

Ingredients
- 500g red onion, finely sliced
- 1kg tomato, chopped
- 150ml Red Wine Vinegar
- 175g brown sugar
- 4 garlic cloves, crushed
- 1 red chilli, finely chopped
- 4cm piece ginger, peeled & chopped
- 5 cardamom seeds
- 1 tbsp Chilli Infused Balsamic
Method
- Tip all the ingredients into a large heavy-based pan and bring to a simmer, stirring frequently.
- Simmer for 1 hour, then bring to a gentle boil so that the mixture turns dark, jammy and shiny.
- Add the Chilli Infused Balsamic. Place into sterilised jars and allow to cool before covering. Will keep for 6 weeks.
