Ingredients

  • 1 tin cannellini beans
  • 1 tin kidney beans
  • 1 tin chick peas
  • 1 tin sweetcorn
  • 1 red onion
  • Handful fresh parsley
  • Handful fresh coriander
  • 1 red pepper
  • 2-3 spring onions
  • 2 cloves garlic or garlic paste
  • Blanched green beans

For the dressing:

Method

  • Chop if necessary and then put all of the ingredients into a large bowl.
  • Dress with the lime juice, and then plenty of the Red Wine Vinegar and the Mint Infused Olive Oil
  • To serve you can leave for a few hours to allow the beans to absorb the dressing or serve straight away. Enjoy for your lunch or as a side to jacket potatoes, BBQ’s, meat, fish or add in some quinoa or bulgar wheat if you want to up the protein even more!
