
Super Protein Bean Salad
Ready In 30 mins
Serves 4

Ingredients
- 1 tin cannellini beans
- 1 tin kidney beans
- 1 tin chick peas
- 1 tin sweetcorn
- 1 red onion
- Handful fresh parsley
- Handful fresh coriander
- 1 red pepper
- 2-3 spring onions
- 2 cloves garlic or garlic paste
- Blanched green beans
For the dressing:
- 1 part Red Wine Vinegar
- 1 part Mint Infused Olive Oil
- Juice of half a lime or lemon
- Sea salt and cracked black pepper
Method
- Chop if necessary and then put all of the ingredients into a large bowl.
- Dress with the lime juice, and then plenty of the Red Wine Vinegar and the Mint Infused Olive Oil
- To serve you can leave for a few hours to allow the beans to absorb the dressing or serve straight away. Enjoy for your lunch or as a side to jacket potatoes, BBQs, meat, fish or add in some quinoa or bulgar wheat if you want to up the protein even more!
