
Smoked salmon avocado prawn salad

Serves 4

Ingredients
- 6 or 8 slices of smoked salmon
- 2 ripe avocado
- 4 Handfuls of cooked prawns
- 1 large Bag of salad leaves (rocket and spinach work well!)
- Juice of half a lemon
- 1 cucumber thinly sliced
- DRESSINGS
- 3 parts Lime with Chilli Infused Olive Oil to 1 part Garlic & Ginger Balsamic
Method
- Spread the salad leaves over the bottom of your serving bowl.
- Drizzle the lemon juice over the avocado and the smoked salmon to keep them from going brown, then place them over the leaves. Keep the cooked prawns whole and scatter them over. Thinly slice the cucumber and place over the leaves.
- Drizzle plenty of the Lime & Chilli Infused Olive Oil and Garlic & Ginger Infused Balsamic dressing over the dish.
- SERVE
- As an easy starter to impress your guests!
