
Thai style salad dressing

Serves 4

Ingredients
- Lime & Chilli Infused Olive Oil
- Garlic & Ginger Infused Balsamic
- Peanuts or Cashews
- Fresh Coriander
- Fresh lime if desired
- Fish sauce or soy sauce if desired
Method
- Chop the coriander and crush the nuts of your choice. Mix 2 parts Lime & Chilli Infused Olive Oilto 1 part Garlic & Ginger Infused Balsamic, and add to the herbs and the nuts.
- Add a squeeze of fresh lime for extra zing.
- You can stop there, or add in a little fish sauce or soy sauce to give more authentic depth of flavour.
- You could also add in a little brown sugar, honey or sweet chilli sauce for extra sweetness if you’d prefer, although the balsamic does give a lovely sweetness that is enough for us!
