Grilled Salmon Salad

Quick meals don't have to be unhealthy, a grilled salmon salad provides a light, fresh and healthy alternative to traditional 'fast food'.



Lightly season both sides of the salmon fillets with salt and pepper

Drizzle a small amount of Sicilian olive oil on both sides to coat

Heat grill to medium, once hot, add the seasoned salmon fillets, cook salmon for 4-5 minutes on each side until flaky. Remove skin if still attached.

Remove salmon from the grill and cover to keep warm.

In a large bowl add salad ingredients; lettuce, tomatoes, cucumber, red onion, peppers and drizzle with pomegranate & fig balsamic as a dressing.

Serve the salmon and finish with a drizzle of lemon infused olive oil
