Mediterranean Chickpea Salad with a LEMON PARSLEY VINAIGRETTE
Ready In 20 mins
- 2 x can’s chickpeas, drained and rinsed
- 1 medium cucumber, chopped
- 1 bell pepper, chopped
- 1 red onion, chopped
- ½ Jar Kalamata olives, chopped
- 125g feta, cubed
- Sea salt, Freshly ground black pepper
For the Dressing
- In a large bowl toss together chickpeas, cucumber, bell pepper, red onion, olives, and feta.
- Using a Salad Dressing Shaker combine Lemon Infused Olive Oil, White Wine Vinegar, parsley, and red pepper or chilli flakes and shake well.
- Dress salad with vinaigrette.
- Season with salt and pepper and serve.
