
Grilled Salmon Salad

Serves 4

Ingredients
- Four 4-ounce pieces of salmon
- 1 Tbsp Sicilian Olive Oil
- Salt
- Pepper
- 1 lettuce
- 200g tomatoes chopped
- 200g cucumber diced
- 100g red onion thinly sliced
- 100g chopped peppers
- 3 tbsp Mango & Passionfruit Infused Balsamic
- 3 Tbsp Lemon Infused Olive Oil
Method
Lightly season both sides of the salmon fillets with salt and pepper
Drizzle a small amount of Sicilian Olive Oil on both sides to coat
Heat grill to medium, once hot, add the seasoned salmon fillets, cook salmon for 4-5 minutes on each side until flaky. Remove skin if still attached.
Remove salmon from the grill and cover to keep warm.
In a large bowl add salad ingredients; lettuce, tomatoes, cucumber, red onion, peppers and drizzle with Mango & Passionfruit Infused Balsamic
Serve the salmon and finish with a drizzle of Lemon Infused Olive Oil
